Vegetable Wrap

My signature salad burrito:

Makes 2 small or 1 large:

  • 2 leaves of Romane lettuce – chopped
  • 1 small tomato – thinly sliced
  • a hand full of black olives – halved
  • 1 small cucumber – thinly sliced
  • 1 tbsp red onion – minced
  • 2 tbsp cold pressed extra virgin olive oil
  • juice of 1/2 lemon – don’t squeeze too much
  • 4 sun-dried tomatoes – sliced
  • 2 or 3 drained salad peppers – sliced
  • whole wheat wraps, or large whole wheat tortillas
  • 2 tsp sesame seed (black or white)
  • pinch of sea salt
  • a few dashes black pepper
  • many dashes of Greek seasoning

Distribute the ingredients evenly in the middle. Put the olive oil and lemon juice on top of the lettuce, not on the bottom, unless you want a soggy wrap that will fall apart. I like to put the wrap or tortilla on the gas stove for a few seconds on each side to soften it up and prevent it from cracking.

Options: You can add feta cheese if you be into that. Spread some hummus on the shell for a more savory flavor.  For more heat try some cayenne pepper or minced habanero pepper. I recommend it with tea.
