Mewgel

This is probably the only time I will post a baked recipe, I had to because it tastes so good. This recipe is based on a Jewish recipe called Kugel.

Serves 2:

  • 1 medium onion
  • 2 carrots
  • 2 stalks of celery
  • 3 eggs
  • 3 tbsp cold pressed extra virgin olive oil
  • 2 cups of chopped spinach
  • 6 cloves of garlic
  • 1 tbsp of thyme, oregano, or parsley)
  • 1/2 cup of whole wheat matzo meal
  • 1-2 tsp black pepper
  • salt to taste

To start, finely chop all of the vegetables and put them into a large bowl. Then in a either a blender or hand blender container, put a handful of spinach and olive oil, blend until smooth. Next, in a smaller bowl, put the eggs, seasonings, matzo meal and mix.  Then combine all 3 together into the large bowl, let it rest for approx 30 minutes so the matzo meal can soak and the flavors can meld. In the meantime oil a casarole dish (a little less than a tbsp of olive oil). After the 30 minutes has elapsed pour the mixture into the dish dabbing it on the top to give it some texture, preheat the oven to 350 and cook for about 50 minutes until you see the sides turning brown and the top firm to the touch.  Allow to cool and put it in the freezer or fridge to chill (not freeze) slice it into squares and enjoy. A quality tea or apple juice would go well with this.
